  • Pre-made pie crust

Instructions

  1. Boil the cubed russet potatoes in cold water until tender (15-20 minutes). Drain and return to pot.
  2. Add 1/4 cup of butter and heavy cream to the potatoes; mash until smooth. Mix in salt, pepper, and thyme.
  3. In a skillet, melt the remaining butter over medium heat. Sauté chopped onion and minced garlic until translucent.
  4. Fold the sautéed mixture into the mashed potatoes along with cheese; adjust seasoning as needed.
  5. Roll out the pie crust into a pie dish, fill it with the potato mixture, and smooth out the top.
  6. Brush crust edges with beaten egg for a golden finish. Bake at 400°F (200°C) for 35-40 minutes or until golden brown.
  7. Let cool for 10 minutes before slicing.
