- 1–1/2 to 2 pounds chicken tenders or large boneless skinless chicken breasts sliced into 1-inch thick strips
- 1–1/2 cups all-purpose flour
- 1 tsp. kosher salt
- 1/4 tsp. black pepper
- 1/4 tsp. garlic powder
- 1/4 tsp. smoked paprika
- 1 large egg + 2 tablespoons water, beaten
- Vegetable, canola, or peanut oil for frying
- 2 cups all-purpose flour
- 1 Tbsp. baking powder
- 1 tsp. kosher salt
- 1/4 tsp. baking soda
- 1/2 cup (1 stick) cold butter
- 3/4 cups buttermilk
- 1/4 cup unsalted butter, melted
- 1 cup honey
- 2 tsp. crushed red pepper flakes
- 1 Tbsp. apple cider vinegar
- Heat oil in a large pot to 365-375°F (185-190°C).
- Prepare seasoned flour by mixing flour, salt, pepper, garlic powder, and smoked paprika.
- Dredge chicken in seasoned flour, dip into beaten egg mixture, then coat again in flour.
- Fry chicken in batches until golden brown (8-10 minutes). Drain on paper towels.
- Preheat oven to 450°F (232°C). Mix flour, baking powder, salt, baking soda; cut in cold butter until crumbly. Stir in buttermilk.
- Shape dough and cut out biscuits; bake for 15-17 minutes until golden.
- For hot honey sauce, simmer honey with crushed red pepper flakes; stir in apple cider vinegar.
- Assemble by placing fried chicken on split biscuits and drizzle with hot honey.
