  • 11/2 to 2 pounds chicken tenders or large boneless skinless chicken breasts sliced into 1-inch thick strips
  • 11/2 cups all-purpose flour
  • 1 tsp. kosher salt
  • 1/4 tsp. black pepper
  • 1/4 tsp. garlic powder
  • 1/4 tsp. smoked paprika
  • 1 large egg + 2 tablespoons water, beaten
  • Vegetable, canola, or peanut oil for frying
  • 2 cups all-purpose flour
  • 1 Tbsp. baking powder
  • 1 tsp. kosher salt
  • 1/4 tsp. baking soda
  • 1/2 cup (1 stick) cold butter
  • 3/4 cups buttermilk
  • 1/4 cup unsalted butter, melted
  • 1 cup honey
  • 2 tsp. crushed red pepper flakes
  • 1 Tbsp. apple cider vinegar

Instructions

  1. Heat oil in a large pot to 365-375°F (185-190°C).
  2. Prepare seasoned flour by mixing flour, salt, pepper, garlic powder, and smoked paprika.
  3. Dredge chicken in seasoned flour, dip into beaten egg mixture, then coat again in flour.
  4. Fry chicken in batches until golden brown (8-10 minutes). Drain on paper towels.
  5. Preheat oven to 450°F (232°C). Mix flour, baking powder, salt, baking soda; cut in cold butter until crumbly. Stir in buttermilk.
  6. Shape dough and cut out biscuits; bake for 15-17 minutes until golden.
  7. For hot honey sauce, simmer honey with crushed red pepper flakes; stir in apple cider vinegar.
  8. Assemble by placing fried chicken on split biscuits and drizzle with hot honey.
