  • 1 pound boneless, skinless chicken thighs or breasts
  • 1/4 cup honey
  • 1/4 cup fresh lime juice
  • 2 tablespoons soy sauce
  • 1 teaspoon lime zest
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup black beans, drained and rinsed
  • 1 avocado, diced
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Cook 2 cups of long-grain white rice in 4 cups of water; bring to a boil, reduce heat, cover, and simmer for 18-20 minutes.
  2. In a bowl, whisk together 1/4 cup honey, 1/4 cup lime juice, 2 tablespoons soy sauce, lime zest, garlic powder, onion powder, salt, and black pepper.
  3. Marinate 1 pound of chicken in half the marinade for at least 15 minutes.
  4. Heat olive oil in a skillet over medium-high heat; cook marinated chicken for 5-7 minutes on each side until golden brown.
  5. Add 1 cup corn and 1 cup drained black beans to the skillet; stir until heated through (3-4 minutes).
  6. Slice chicken and serve over rice with corn and bean mixture; top with diced avocado.
