  • 2 tbsp cornflour (cornstarch)
  • 4 cloves minced garlic
  • 110 g (1/3 cup) honey
  • 80 ml (1/3 cup) chicken stock
  • 1 tbsp rice vinegar
  • 2 tbsp vegetable oil
  • 1 tbsp unsalted butter
  • 1 tbsp light soy sauce
  • Salt and pepper to taste

Instructions

  1. Coat the chicken thighs in cornflour, salt, and pepper until well-coated.
  2. Heat vegetable oil in a pan over high heat. Sear the chicken for about 4-5 minutes on one side until golden brown; flip and cook for an additional 2 minutes.
  3. Add butter and minced garlic to the pan; lower the heat to medium to avoid burning the garlic.
  4. In a bowl, mix honey, chicken stock, rice vinegar, and soy sauce. Pour this mixture over the chicken in the pan.
  5. Bring to a boil then reduce to simmer for about 4-5 minutes until the sauce thickens and the chicken is cooked through.
  6. Garnish with parsley and chili flakes before serving over boiled rice.
