  • 2 lbs Boneless Leg of Lamb
  • 12 whole cloves of garlic
  • 1 large white onion
  • 4 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • 1/3 cup mayonnaise
  • 1 1/2 cups beef stock
  • 2 cups baby potatoes (halved)
  • 12 small carrots (whole)
  • 1/2 tbsp cumin
  • 1 tbsp smoked paprika
  • 1 tbsp dried Italian seasoning
  • 1/2 tbsp dried oregano
  • Kosher salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F.
  2. In a roasting dish, layer sliced onion and whole garlic cloves.
  3. Make small slits in the lamb and insert garlic cloves and rosemary.
  4. Rub mayonnaise over the lamb and season with cumin, smoked paprika, Italian seasoning, oregano, salt, and pepper.
  5. Add additional herbs on top and pour beef stock around the lamb.
  6. Cover with foil and bake for about 3 hours.
  7. During the last hour, add halved baby potatoes and whole carrots to roast until tender.
