  • 4 bell peppers
  • 1 tbsp olive oil
  • 4 cups fresh spinach
  • 1 tub ricotta cheese (15 oz)
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • ½ cup sliced green onions
  • ½ cup chopped fresh basil
  • 1 handful chopped flat-leaf parsley
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1 tsp fennel seed
  • 1 tsp salt
  • ½ tsp pepper
  • 2 large eggs
  • ½ cup breadcrumbs
  • 1 tbsp oil

Instructions

  1. Preheat the oven to 400°F (204°C). Halve the bell peppers lengthwise, remove seeds, brush with olive oil, and bake for 20 minutes.
  2. Microwave spinach until wilted (15-30 seconds), chop, then mix with ricotta, mozzarella, parmesan, green onions, basil, parsley, and seasonings in a bowl.
  3. Stuff each pepper evenly with the filling and sprinkle breadcrumbs mixed with oil on top.
  4. Bake at 350°F (176°C) for another 30 minutes or until golden brown.
