  • 8 lamb chops
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh rosemary, chopped
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  • 4 large potatoes, peeled and cubed
  • 4 tbsp butter
  • 1/2 cup heavy cream
  • Salt to taste
  • 1 bunch asparagus, trimmed
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1/2 cup apple vinegar
  • 1/2 cup beef broth
  • 1 tbsp butter
  • 1 tsp cornstarch (optional, for thickening)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix olive oil, chopped parsley, rosemary, minced garlic, salt, and pepper in a bowl. Rub this herb mixture onto both sides of each lamb chop.
  3. Heat a skillet over medium-high heat and sear the lamb chops for about 2 minutes on each side until golden brown.
  4. Transfer the skillet to the oven and roast for 6–8 minutes for medium-rare; adjust cooking time for your preference.
  5. Boil cubed potatoes in salted water until fork-tender (about 15 minutes). Drain and mash with butter, heavy cream, and salt until smooth.
  6. Toss asparagus in olive oil, salt, and pepper, then roast in the oven for 12–15 minutes until tender but crisp.
  7. For the sauce, combine apple vinegar and beef broth in the same skillet used for the lamb; simmer until reduced by half. Stir in butter and optional cornstarch for thickening.
  8. Serve lamb chops over mashed potatoes with roasted asparagus on the side, drizzled with sauce.
