  • 1 medium white onion, chopped
  • 1 can mild green chiles (or substitute with 2 seeded and diced jalapeños)
  • 1 tablespoon ground cumin
  • 2 teaspoons chili powder
  • ¼ teaspoon coriander
  • ¼ teaspoon dried oregano
  • 4 cups low sodium chicken broth
  • 2 (15 ounce) cans chickpeas, rinsed and drained
  • ¾ teaspoon salt, plus more to taste
  • Freshly ground black pepper
  • 1 ½ pounds boneless skinless chicken thighs (or chicken breast)
  • ½ cup frozen corn
  • 1 medium lime, juiced
  • ⅓ cup fresh, chopped cilantro

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sauté onion and green chiles until softened, about 3-4 minutes.
  2. Stir in spices (cumin, chili powder) and cook for 30 seconds until fragrant.
  3. Add chicken broth, one can of chickpeas, and chicken; season with salt and pepper. Simmer on medium-low for 20-30 minutes until cooked through.
  4. Remove chicken and shred using forks; return to pot along with lime juice and cilantro.
  5. Blend the remaining chickpeas with water until smooth; stir into the pot along with frozen corn. Cook on low for an additional 5-10 minutes.
