  • 1 red bell pepper
  • 1 red onion
  • 1 jalapeno
  • 16 oz frozen corn
  • 4 cups cooked chicken breast
  • 1/2 cup light mayo
  • 1/2 cup plain nonfat Greek yogurt
  • 1 lime (zested and juiced)
  • 1/2 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp kosher salt
  • 2 tsp chili powder
  • 1 bunch scallions
  • 1/2 cup fresh cilantro
  • 1.5 oz Cotija cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Chop the red bell pepper, red onion, and jalapeno into bite-sized pieces.
  3. Spread chopped veggies and frozen corn on a sheet pan. Spray with olive oil and sprinkle with salt; roast for 20-25 minutes until caramelized.
  4. In a bowl, whisk together light mayo, Greek yogurt, lime zest and juice, cumin, paprika, chili powder, and salt.
  5. Once roasted veggies cool slightly, combine them with chopped chicken in the dressing bowl along with scallions and cilantro. Toss well.
  6. Serve topped with crumbled Cotija cheese.
