  • 1 cup mashed sweet potato
  • 2 oz unsweetened dark baking chocolate
  • 1/4 cup creamy cashew butter or almond butter
  • 1/4 cup pure maple syrup
  • 1 egg
  • 1 egg yolk
  • 1 tsp pure vanilla extract
  • 1/3 cup cacao powder
  • 1 Tbsp coconut flour
  • 1/2 tsp baking soda
  • 1/8 tsp pink salt
  • 1/2 cup dark chocolate chips
  • 1/2 cup chopped pecans or walnuts

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a microwave-safe bowl, melt the unsweetened dark chocolate and nut butter together until smooth.
  3. Stir in the mashed sweet potato, maple syrup, egg, egg yolk, and vanilla extract until well combined.
  4. Sift in the cacao powder, coconut flour, baking soda, and pink salt; gently fold until just mixed.
  5. Fold in the dark chocolate chips and chopped nuts.
  6. Pour the batter into a parchment-lined baking dish and smooth the top.
  7. Bake for about 25 minutes until set but slightly soft in the center.
  8. Let cool before slicing.
