  • 125 g chicken breast (cut & pounded into a thin schnitzel)
  • 225250 g white potato (peeled and chopped into fries)
  • 1 tbsp Greek yogurt (20-25g)
  • 1/2 tsp dijon mustard (2-3g)
  • 1/4 tsp minced garlic (or garlic powder)
  • Dash of paprika, mixed herbs, salt, and pepper
  • 1315 g panko breadcrumbs
  • 5 g parmesan (grated)
  • 10 g light mayonnaise (about 1/2 tbsp)
  • 25 g Greek yogurt (heaped tbsp)
  • 1/4 tsp minced garlic (or garlic powder)
  • 1/2 tsp dijon mustard
  • 1/4 tsp anchovy paste or anchovies blended to create a paste
  • 1 tbsp apple cider vinegar
  • Juice from 1/41/2 lemon
  • 35 g parmesan (grated)
  • Salt & pepper to taste
  • 1/21 head cos, romaine or iceberg lettuce
  • 1 tsp honey (7g)
  • 2 tsp hot sauce (10g)
  • Dash of chili flakes

Instructions

  1. Preheat your oven or air fryer. Cut potatoes into fries, toss with olive oil, and seasonings before cooking until crispy.
  2. Season and pound chicken breast thinly. Cook in a pan or air fryer until golden brown and cooked through.
  3. In a bowl, whisk together Greek yogurt, mayonnaise, Dijon mustard, garlic, apple cider vinegar, lemon juice, and anchovy paste for the dressing.
  4. Chop lettuce into bite-sized pieces and combine with dressing until well-coated.
  5. Top the salad with crispy chicken slices and fries. Serve immediately.
