- 1 1/4 lbs boneless chicken breasts, diced
- 2 tablespoons olive oil
- 2 tablespoons butter (or additional olive oil)
- Salt and freshly ground black pepper
- 3 teaspoons italian seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon lemon zest
- 10 oz. (2 small) zucchini, sliced
- 10 oz. (2 small) yellow squash, sliced
- 1/3 cup grated parmesan cheese
- 2 tablespoons chopped fresh parsley
- 2 tablespoons fresh lemon juice
- Dice chicken breasts into small pieces and season with salt, pepper, garlic powder, and half of the Italian seasoning.
- Heat olive oil in a skillet over medium-high heat. Add seasoned chicken in a single layer and cook until golden brown.
- Add zucchini and yellow squash to the skillet. Sprinkle with remaining Italian seasoning and onion powder; sauté until veggies are tender.
- Top with grated parmesan cheese and drizzle with lemon juice; stir gently until cheese melts.
- Serve garnished with fresh parsley and extra lemon zest.
