  • 20 tablespoons unsalted butter, cold, cubed
  • ½ cup milk (or water)
  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • 1/3 cup packed light brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon nutmeg, freshly grated
  • Pinch cloves
  • 1 (15 ounce) can pumpkin puree
  • 1½ cups powdered sugar
  • 23 tablespoons milk
  • 1 ½ teaspoons vanilla extract

Instructions

  1. In a large bowl, mix flour, powdered sugar, ground cinnamon, and salt. Add cold butter; blend until crumbly.
  2. In a separate bowl, whisk together milk (or water), egg yolks, and vanilla extract. Gradually add to the flour mixture until combined. Chill dough for 30 minutes.
  3. For the filling, blend pumpkin puree with brown sugar, ground cinnamon, nutmeg, and cloves until smooth.
  4. Roll out chilled dough to ¼ inch thick; cut out circles. Place filling on one half of each circle, fold over and crimp edges to seal.
  5. Bake at 350°F (175°C) for about 25 minutes until golden brown.
