  • 2 cups beef broth
  • 4 carrots, sliced
  • 3 potatoes, peeled and cubed
  • 2 teaspoons fresh thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Brown the beef cubes on all sides and set aside.
  2. In the same pot, sauté the chopped onion and minced garlic until translucent.
  3. Stir in tomato paste and flour, cooking for a minute to coat.
  4. Add beef broth and stir well to deglaze the pot.
  5. Return beef to the pot with carrots, potatoes, thyme, salt, and pepper.
  6. Bring to a boil then reduce heat; cover and simmer for 1.5 to 2 hours until beef is tender.
  7. Adjust seasoning as needed and garnish with fresh parsley before serving.
