  • 3 pounds boneless chuck roast (cut into 1-inch pieces)
  • Salt and freshly ground pepper (to taste)
  • 2 large onions (sliced)
  • 3 cloves garlic (minced)
  • 2 tablespoons tomato paste
  • 2 tablespoons flour
  • 2 ½ cups beef broth
  • 1 tablespoon brown sugar
  • 2 sprigs thyme
  • 1 pound carrots (peeled and cut into chunks)
  • 1 ½ pounds Yukon Gold potatoes (peeled and cut into pieces)
  • ½ cup chopped parsley

Instructions

  1. Heat vegetable oil in a large Dutch oven over medium-high heat.
  2. Season the beef with salt and pepper, then brown in batches until caramelized on all sides.
  3. Add onions to the pot and sauté until softened; stir in garlic for extra aroma.
  4. Mix in tomato paste and flour until combined; cook until slightly darkened.
  5. Pour in beef broth and add brown sugar, scraping browned bits from the bottom.
  6. Return the browned beef to the pot, add thyme sprigs, and bring to a boil.
  7. Reduce heat to low, cover, and simmer for one hour.
  8. After an hour, add carrots and potatoes; cover again and cook until tender.
  9. If needed, thicken by raising heat until desired consistency is reached.
  10. Discard thyme before serving and stir in chopped parsley for freshness.
