  • 1 cup cooked rice (white jasmine or brown)
  • 6 large bell peppers (any color)
  • 1 tablespoon olive oil
  • 1/2 medium onion (chopped)
  • 1 pound lean ground beef
  • 3 cloves garlic (minced)
  • 1 (14 ounce) can crushed tomatoes or tomato sauce
  • 1/2 teaspoon Italian seasoning
  • 2 cups shredded cheddar cheese blend, divided
  • Salt & pepper (to taste)

Instructions

  1. Preheat your oven to 400°F and prepare your bell peppers by cutting off the tops and removing seeds.
  2. In a baking dish, arrange the halved peppers cut-side up and pour one cup of water into the bottom.
  3. Heat olive oil in a skillet over medium-high heat. Sauté chopped onions and diced pepper tops for about five minutes.
  4. Add ground beef to the skillet, cooking until browned (about eight minutes). Drain excess fat if necessary.
  5. Stir in minced garlic, crushed tomatoes, Worcestershire sauce (if using), and Italian seasoning. Cook until heated through.
  6. Mix in cooked rice and one cup of cheese; season with salt and pepper.
  7. Spoon filling into each pepper and cover the baking dish with foil. Bake for about 40 minutes.
  8. Remove foil, sprinkle remaining cheese on top of each pepper, and return to oven uncovered for another 5 to 10 minutes until bubbly.
