  • 4 medium russet potatoes, peeled and diced
  • 1 medium yellow onion, chopped
  • 2 garlic cloves, minced
  • 1 cup shredded cheddar cheese, divided
  • 1 cup sour cream
  • 1/2 cup beef broth
  • 1 tablespoon olive oil
  • Salt
  • Black pepper
  • Dried thyme
  • Paprika

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the potatoes by peeling and dicing them into small cubes; chop the onion and mince the garlic.
  3. In a skillet over medium heat, sauté the onion and garlic in olive oil until fragrant.
  4. Add the ground beef, seasoning with salt, black pepper, thyme, and paprika; cook until browned.
  5. Pour in the beef broth and let it simmer for a few minutes.
  6. In a bowl, mix the diced potatoes with the beef mixture; fold in sour cream and half the cheddar cheese.
  7. Transfer to a baking dish and top with remaining cheddar cheese.
  8. Bake covered with foil for 30 minutes; then uncover and bake for another 10-15 minutes until golden brown.
  9. Allow to cool for about 10 minutes before serving.
