  • 1 carrot (thinly sliced)
  • 1 stick of celery (finely chopped)
  • Zest and juice of 1 lemon
  • Kosher salt and freshly ground pepper
  • Optional: 500 ml vegetable stock

  2. In another pot, heat olive oil over medium heat. Sauté minced onion until translucent (about 5 minutes). Add chopped garlic, carrot, and celery; sauté until fragrant (about 3 minutes).
  3. Combine tender beans with sautéed vegetables, lemon zest, and juice. Season with salt and pepper; add vegetable stock if using.
  4. Simmer on low heat for about 30 minutes to develop flavors.
  5. Serve warm, garnished with fresh herbs or a drizzle of olive oil.
