  • 1 lemon (juiced)
  • 2 garlic cloves (minced)
  • 1 tsp oregano
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 a seedless English cucumber (peeled)
  • 1 tsp sea salt (or more to taste)
  • 2 cups plain Greek yogurt
  • 3 cloves garlic (peeled and mashed into a paste)
  • ⅓ cup olive oil
  • 1 tbsp red or white grape juice vinegar
  • 1 tbsp fresh dill (minced)
  • 1 cup warm water (about 110 degrees)
  • 1 tsp active dry yeast (from one 1/4-ounce envelope)
  • 3 cups all-purpose flour (plus more for surface and hands)
  • 3 tbsp extra-virgin olive oil (plus more for bowl)
  • 2 tsp coarse salt
  • Oil to brush on the dough before cooking
  • 2 heads garlic
  • 1 large onion (sliced)
  • 300 g baby spinach (about a small rectangle container)
  • 1 cup feta cheese
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken by mixing lemon juice, minced garlic, olive oil, oregano, and salt in a bowl. Let sit while you prepare other ingredients.
  2. Make tzatziki by grating cucumber, salting it, then mixing with Greek yogurt, mashed garlic, olive oil, vinegar, and dill.
  3. Combine warm water and yeast in a bowl; let froth. Gradually add flour and salt until dough forms; knead until smooth.
  4. Allow the dough to rise in an oiled bowl covered with a cloth until doubled in size (about 1 hour).
  5. Cook marinated chicken in a skillet until golden brown and cooked through; slice into strips.
  6. Roll out risen dough into flatbreads and cook on a hot skillet until bubbly and charred (about 2–3 minutes per side).
  7. Assemble by spreading tzatziki on flatbreads and topping with chicken strips, sautéed onions, spinach, feta cheese, and roasted garlic.
