  • ½ cup breadcrumbs
  • ⅓ cup crumbled feta cheese
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • Zest and juice of 2 lemons
  • Fresh parsley
  • Fresh dill

  1. Combine ground chicken, egg, breadcrumbs, feta, parsley, oregano, garlic, lemon zest, salt, and pepper in a bowl. Mix gently until combined.
  2. Shape the mixture into 1-inch meatballs. Heat olive oil in a skillet over medium heat and cook meatballs until golden brown on all sides (about 8-10 minutes).
  3. In another pot, bring chicken broth to a boil. Add orzo and cook until al dente; drain excess liquid.
  4. In the pot with cooked orzo, mix in butter (or olive oil), lemon juice and zest, minced garlic, salt, and pepper. Toss to coat.
  5. Serve meatballs over lemony orzo garnished with fresh herbs and crumbled feta.
