  • 2 cups uncooked orzo
  • 1 lb cooked chicken, shredded
  • 2 tablespoons olive oil
  • 1 red onion, diced
  • 4 cloves garlic, minced
  • 1/2 cup sundried tomatoes, diced
  • 2 cups baby spinach, chopped
  • 1 cup feta cheese, crumbled
  • 5 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 lemon, juiced and zested
  • Fresh parsley, to serve

Instructions

  1. Preheat the oven to 400°F.
  2. In a baking dish, combine diced onion and olive oil; bake for about 5 minutes until soft.
  3. Stir in uncooked orzo, garlic, sundried tomatoes, spinach, oregano, salt, and additional olive oil.
  4. Fold in shredded chicken and feta cheese along with lemon juice and zest.
  5. Pour in chicken broth; cover with foil and bake for 15 minutes.
  6. Remove foil and bake uncovered for an additional 15-20 minutes until golden brown.
  7. Let cool for five minutes before serving topped with fresh parsley.
