- 2 cups uncooked orzo
- 1 lb cooked chicken, shredded
- 2 tablespoons olive oil
- 1 red onion, diced
- 4 cloves garlic, minced
- 1/2 cup sundried tomatoes, diced
- 2 cups baby spinach, chopped
- 1 cup feta cheese, crumbled
- 5 cups chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1 lemon, juiced and zested
- Fresh parsley, to serve
- Preheat the oven to 400°F.
- In a baking dish, combine diced onion and olive oil; bake for about 5 minutes until soft.
- Stir in uncooked orzo, garlic, sundried tomatoes, spinach, oregano, salt, and additional olive oil.
- Fold in shredded chicken and feta cheese along with lemon juice and zest.
- Pour in chicken broth; cover with foil and bake for 15 minutes.
- Remove foil and bake uncovered for an additional 15-20 minutes until golden brown.
- Let cool for five minutes before serving topped with fresh parsley.
