Instructions

  1. Prepare the marinade by whisking together olive oil, lemon juice, garlic powder, oregano, salt, and pepper.
  2. Pound chicken breasts to even thickness and marinate in the mixture for at least 30 minutes.
  3. While chicken marinates, create tzatziki by mixing Greek yogurt, grated cucumber, lemon juice, garlic, salt, and fresh dill.
  4. Cook rice or quinoa according to package instructions.
  5. Preheat air fryer to 380°F; cook marinated chicken for about 10 minutes until internal temperature reaches 165°F.
