  • 3 medium Yukon Gold potatoes, chopped into ½-inch cubes
  • 1 can fire-roasted diced tomatoes (14 ounces)
  • Low-sodium beef broth (2.5 to 3 cups)

Instructions

  1. Preheat your oven to 325°F if using an oven method.
