  • 1 lb sirloin steak or steak tips, cut into bite-sized pieces
  • Salt & black pepper, to taste
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 tbsp all-purpose flour
  • 2 cups milk (whole or 2%)
  • 1 cup beef broth
  • 2 cups shredded sharp cheddar cheese
  • 1 package (20 oz) cheese tortellini (fresh or refrigerated)
  • ½ cup shredded mozzarella (for topping)
  • 2 tbsp chopped parsley (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Season steak with salt and pepper, then sear in a skillet with olive oil for about 2–3 minutes per side until browned. Set aside.
  2. In the same skillet, melt butter and sauté minced garlic for 30 seconds. Stir in flour for a roux, then gradually add milk and beef broth until smooth. Mix in cheddar cheese until creamy.
  3. Cook tortellini according to package directions; slightly undercook them. Drain and toss with olive oil.
  4. In a greased baking dish, combine cooked tortellini, seared steak, and cheese sauce. Top with shredded mozzarella.
  5. Bake uncovered for 20–25 minutes until bubbly and golden brown. Garnish with chopped parsley before serving.
