  • 4 chicken thighs, bone-in and skin-on
  • 2 tablespoons gochujang
  • 2 tablespoons miso paste
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • Salt and pepper, to taste
  • Sesame seeds, for garnish
  • Sliced green onions, for garnish

Instructions

  1. In a bowl, whisk together gochujang, miso paste, soy sauce, honey (or maple syrup), rice vinegar, sesame oil, garlic, and ginger until combined.
  2. Place chicken thighs in a zip-top bag or bowl and pour marinade over them. Seal or cover and refrigerate for at least 30 minutes (overnight recommended).
  3. Preheat oven to 400°F (200°C). Lightly grease a baking dish.
  4. Remove chicken from marinade and arrange in the baking dish skin-side up. Discard leftover marinade.
  5. Sprinkle salt and pepper over each thigh.
  6. Bake for 25-30 minutes until internal temperature reaches 165°F (75°C) and skin is golden brown.
  7. Optionally broil for an additional 2-3 minutes to crisp the skin further.
  8. Let rest for a few minutes before garnishing with sesame seeds and green onions.
