  • ½ cup unsalted butter (melted)
  • 1 cup whole milk (room temperature)
  • 2 large eggs (room temperature)
  • ¼ cup molasses
  • 1 tsp freshly grated ginger
  • 1 tsp vanilla extract

Instructions

  1. In a large bowl, whisk together all the dry ingredients: flour, sugars, baking soda, baking powder, salt, ginger, cinnamon, and cloves.
  2. In another bowl, combine melted butter, milk, eggs, molasses, grated ginger, and vanilla until smooth.
  3. Pour wet ingredients into dry ingredients and whisk gently until just combined; some lumps are okay. Let sit for about 10 minutes.
  4. Preheat your waffle iron on high heat. Spray with baking spray.
  5. Pour batter into the waffle iron and cook until golden brown and crispy (about 5 minutes).
  6. Keep cooked waffles warm in the oven while you finish making the rest.
