  • 3/4 cup unsalted butter (softened to room temperature)
  • 3/4 cup brown sugar (packed)
  • 1 large egg (room temperature)
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract
  • 1/3 cup molasses (not blackstrap)
  • 1/3 cup turbinado or granulated sugar
  • 6 tablespoons unsalted butter (softened to room temperature)
  • 23 cups icing sugar (sifted)
  • 34 tablespoons plant-based eggnog
  • 1/4 teaspoon vanilla extract (alcohol-free, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two cookie sheets with parchment paper.
  2. In a large bowl, whisk together flour, ginger, cinnamon, cloves, baking soda, and salt.
  3. In another bowl, cream together softened butter and brown sugar until smooth. Mix in egg, egg yolk, vanilla extract, and molasses until well combined.
  4. Gradually add the dry ingredients to the wet mixture until fully incorporated. Chill the dough for at least 30 minutes.
  5. Scoop tablespoon-sized portions of dough, roll in sugar, and place on prepared sheets 2 inches apart. Bake for 8-10 minutes until set but soft in the center.
  6. For frosting, beat softened butter until creamy; gradually add sifted icing sugar and plant-based eggnog until smooth.
  7. Assemble cookies by frosting one cookie and topping it with another.
