  • 1 bunch green onions (chopped, green and white divided)
  • 4 cloves garlic (minced)
  • 2 tablespoon ginger (fresh, minced)
  • 5.5 cups low sodium chicken broth (or vegetable broth for vegan)
  • 2 whole star anise
  • 2 tablespoon soy sauce (or Tamari for a Gluten Free option)
  • 10 oz crimini mushrooms (sliced)
  • 6 oz rice noodles
  • 1.5 heads bok choy (roughly chopped)
  • sesame seeds (for topping)
  • red pepper flakes (for topping)

Instructions

  1. Heat olive oil in a stockpot over medium heat. Sauté diced shallots until translucent, about 4-5 minutes.
  2. Add minced garlic and ginger along with the green part of the green onions; cook until fragrant.
  3. Pour in chicken or vegetable broth, add star anise and soy sauce, then bring to a simmer for 10 minutes.
  4. Remove star anise, then add sliced mushrooms, rice noodles, and bok choy; simmer for another 5-8 minutes until noodles are tender.
  5. Serve in bowls topped with sesame seeds, chopped green onions, and red pepper flakes.
