  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter
  • 1 cup brown sugar (packed)
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1/3 cup molasses
  • 1/3 cup white sugar (or coarse sugar)
  • 1/2 cup unsalted butter (softened)
  • 3/4 cup vegan marshmallows cream (about 1/2 of a 7.5 ounce jar)
  • 1/4 teaspoon salt
  • 11 1/2 cup powdered sugar
  • 1 tablespoon milk or cream

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, ground ginger, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In another bowl, cream together unsalted butter and brown sugar until fluffy. Add in molasses and mix well.
  4. Gradually add dry ingredients to the wet mixture until just combined.
  5. Scoop tablespoon-sized dough onto the baking sheet and bake for about 10 minutes until set but soft in the middle.
  6. For the filling, beat softened butter with vegan marshmallows cream and powdered sugar until smooth.
  7. Once cookies are cool, spread filling between two cookies to create a sandwich.
