  • 2 large yellow onions (thinly sliced)
  • ½ cup chicken broth
  • 4 cups vegetable oil
  • ¼ cup unsalted butter (melted)
  • ¼ cup all-purpose flour
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper
  • ½ teaspoon dried mustard
  • ½ cup whole milk (room temperature)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a 9×13-inch baking dish with nonstick spray.
  2. In a saucepan, melt butter over medium heat; sauté diced onion and minced garlic until translucent (about 5 minutes).
  3. In a large bowl, combine thawed hash browns, cheddar cheese, sour cream, sautéed onion mixture, flour, salt, pepper, cayenne pepper, dried mustard, chicken broth, and milk. Mix well.
