  • 5 egg whites
  • ¼ teaspoon cream of tartar
  • 1¼ cups fine sugar
  • 2 teaspoons vanilla extract
  • 2 teaspoons white vinegar
  • 2 tablespoons cornflour
  • 600ml thickened cream
  • Sliced strawberries
  • Passionfruit pulp
  • Icing sugar, for garnish

Instructions

  1. Preheat the oven to 120°C (250°F).
  2. In a clean bowl, whip egg whites until frothy; add cream of tartar and whip until soft peaks form.
  3. Gradually add sugar one tablespoon at a time, whipping until glossy stiff peaks form.
  4. Gently fold in vanilla extract, vinegar, and cornflour.
  5. Shape meringue into three layers on a parchment-lined baking tray.
  6. Bake for about 1 hour and 15 minutes without opening the door.
  7. Cool inside the oven with the door ajar to prevent cracks.
  8. Once cooled, layer whipped cream over meringue and top with strawberries and passionfruit pulp before serving.
