  • 340 grams top sirloin, cut into cubes

  • 2 cups apple cider
  • 1/2 cup beef broth
  • 1 large onion, chopped
  • 2 medium carrots, peeled and chopped
  • 6 large potatoes, peeled
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1 cup sharp cheddar cheese, shredded
  • 3 tablespoons chives, finely chopped

Instructions

  1. Preheat oven to 375°F (190°C). In a skillet over medium-high heat, combine olive oil and butter. Season beef with salt and pepper; sear until browned on all sides (about 6-8 minutes).
  2. Add chopped onions and carrots to the skillet. Sauté until softened (approximately 4-5 minutes).
  3. Sprinkle flour over the mixture and stir well for about a minute. Pour in apple cider and beef broth, scraping up brown bits from the pan. Bring to a boil.
  4. Transfer to an oven-safe dish, cover tightly, and bake for about 60-90 minutes until beef is fork-tender.
  5. Meanwhile, boil peeled potatoes in salted water until tender (20-25 minutes). Drain and return them to the pot.
  6. Mix in milk, sour cream, cheddar cheese, and chives into the potatoes; mash until smooth.
  7. Serve stew over mashed potatoes and enjoy!
