  • 5 leeks (ends trimmed)
  • 1 cup round rice
  • 7 ounces (200 grams) ground beef
  • ¼ cup parsley (chopped)
  • ¼ cup mint (chopped)
  • 1 tomato (finely diced)
  • 2 tablespoons pomegranate molasses
  • 4 tablespoons olive oil
  • 1 flat teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Baharat spice
  • ½ lemon (squeezed)
  • 2 cups water
  • ⅓ cup date syrup
  • ¼ cup olive oil
  • ½ lemon (squeezed)

Instructions

  1. Preheat your oven to 355°F (180°C).
  2. In a bowl, mix the filling ingredients: rice, ground beef, herbs, tomato, pomegranate molasses, olive oil, salt, pepper, Baharat spice, and lemon juice.
  3. Prepare leeks by cutting them lengthwise and gently separating the layers. Fill each leek with the mixture and fold into triangles.
  4. Arrange stuffed leeks in a baking dish and pour a sauce made from water, date syrup, olive oil, and lemon juice over them. Cover with parchment paper and foil.
  5. Bake for 75 minutes, adding water if needed during cooking for moisture.
