- 3 cloves garlic (minced)
- 1/2 large yellow onion (diced)
- 1 red bell pepper (diced)
- 3 medium-sized red potatoes (cubed)
- 4 ears of corn (or 4 cups frozen/canned corn as substitutes)
- 3 cups vegetable broth
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 14-ounce can full-fat coconut milk
- Chopped green onions (for garnish)
- In a large soup pot over low-medium heat, sauté diced onion and red bell pepper in olive oil until soft (5-7 minutes).
- Add minced garlic and cook until fragrant (about 1 minute).
- Shuck the corn and cut kernels off each cob; add to the pot.
- Pour in vegetable broth, cubed potatoes, and seasonings; bring to a boil then simmer until potatoes are tender (about 15 minutes).
- Scoop half the chowder into a blender with coconut milk; blend until smooth.
- Return blended mixture to the pot; stir well and adjust seasonings to taste.
- Serve hot, garnished with chopped green onions.
