  • 2 Tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1/2 large yellow onion (diced)
  • 1 red bell pepper (diced)
  • 3 medium-sized red potatoes (cubed)
  • 4 ears of corn (or 4 cups frozen/canned corn as substitutes)
  • 3 cups vegetable broth
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 14-ounce can full-fat coconut milk
  • Chopped green onions (for garnish)

Instructions

  1. In a large soup pot over low-medium heat, sauté diced onion and red bell pepper in olive oil until soft (5-7 minutes).
  2. Add minced garlic and cook until fragrant (about 1 minute).
  3. Shuck the corn and cut kernels off each cob; add to the pot.
  4. Pour in vegetable broth, cubed potatoes, and seasonings; bring to a boil then simmer until potatoes are tender (about 15 minutes).
  5. Scoop half the chowder into a blender with coconut milk; blend until smooth.
  6. Return blended mixture to the pot; stir well and adjust seasonings to taste.
  7. Serve hot, garnished with chopped green onions.
