  • 4 large bell peppers
  • 1 lb lean ground turkey
  • 1 medium onion, chopped
  • 1/2 tablespoon minced garlic
  • 2 tablespoons taco seasoning
  • 1 cup corn (Mexicorn or roasted)
  • 1 cup canned black beans (drained and rinsed)
  • 2 cups tomato salsa
  • 1 cup cooked brown rice
  • 1 cup shredded cheese (Mexican blend or sharp cheddar)

Instructions

  1. Preheat oven to 350°F (175°C). Spray a baking dish with olive oil.
  2. Halve the bell peppers lengthwise, remove seeds, and place cut-side up in the dish. Season with olive oil spray, salt, and pepper.
  3. In a sauté pan over medium-high heat, cook ground turkey in olive oil until no longer pink. Add onions and garlic until softened.
  4. Stir in taco seasoning, corn, black beans, salsa, and cooked rice; mix well.
  5. Fill each pepper half with the mixture and top with shredded cheese.
  6. Bake for an additional 15 minutes until cheese is melted and bubbly.
