  • 8 medium waxy potatoes (about 1 kg), peeled and diced
  • 2 shallots, peeled and halved
  • 5 heads garlic, tops cut off
  • Olive oil for drizzling
  • Salt and pepper to taste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 3 cups (750ml) chicken or vegetable broth
  • 1 cup (250ml) heavy cream

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a baking sheet lined with parchment paper, place the diced potatoes, halved shallots, and garlic heads. Drizzle with olive oil, season with salt, pepper, thyme, and rosemary.
  3. Roast for 30 minutes; then cover with foil and roast for another 15-25 minutes until tender.
  4. Transfer the roasted vegetables into a large pot; squeeze out the roasted garlic from its skins.
  5. Add chicken or vegetable broth and heavy cream to the pot; blend until smooth using an immersion blender.
  6. Season to taste with additional salt and pepper.
  7. Gently warm on medium heat before serving.
