  • 1/2 cup (60g) confectioners' sugar
  • 2 teaspoons pure vanilla essence
  • 1 teaspoon fine sea salt
  • Fresh zest from 2 lemons
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 3 cups (360g) all-purpose flour
  • 1/2 cup (113g) softened butter
  • 1 1/2 cups (165g) confectioners' sugar
  • 1 teaspoon pure vanilla essence
  • Pinch of fine sea salt
  • 2 to 4 tablespoons powdered raspberries from freeze-dried raspberries
  • 2 to 3 tablespoons whole milk

Instructions

  1. Cream together softened butter, granulated sugar, and confectioners' sugar until light and fluffy. Add vanilla essence and salt.
  2. Beat in one egg and fresh lemon zest until fully incorporated.
  3. In another bowl, whisk together flour and baking soda. Gradually combine with wet ingredients until just mixed.
  4. Preheat oven to 350°F (180°C). Scoop dough onto lined baking sheets and bake for 12 minutes or until lightly golden.
  5. For the frosting, cream softened butter with confectioners' sugar and vanilla essence, then mix in freeze-dried raspberry powder until desired color is reached. Add milk for consistency if needed.
  6. Frost cooled cookies generously before serving.
