  • 4 large bell peppers (any color)
  • 1 cup uncooked rice
  • 2 cups chicken or vegetable broth
  • 1 tablespoon olive oil
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 pound ground beef
  • 15.5 ounces diced tomatoes (drained)
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut each bell pepper in half lengthwise, remove seeds, and rinse under cold water.
  3. In a saucepan, bring broth to a boil; add rice, cover, and simmer for about 15 minutes.
  4. In a skillet over medium heat, sauté onion in olive oil until softened; add garlic and cook for an additional minute.
  5. Add ground beef; cook until browned, draining excess fat.
  6. Stir in diced tomatoes, cooked rice, Italian seasoning, salt, and pepper until heated through.
  7. Stuff each pepper half with the meat mixture.
  8. Place stuffed peppers in a baking dish covered with foil; bake for about 30 minutes.
  9. Remove foil, top with mozzarella and Parmesan cheese; bake for an additional 15 minutes until bubbly.
  10. Let cool slightly before serving.
