  • 480 ml chicken broth
  • 190 g long-grain brown rice
  • 120 ml sour cream or Greek yogurt
  • 450 g broccoli florets
  • 200 g sharp cheddar cheese

Instructions

  1. Slice chicken into bite-sized pieces. In the crockpot, mix chicken broth, sour cream (or Greek yogurt), dried thyme, garlic powder, onion powder, salt, and black pepper.
  2. Stir in rinsed rice and chicken pieces; top with broccoli florets.
  3. Cover and cook on low for 3-4 hours or high for 2-3 hours until cooked through.
  4. Stir in half the cheddar until melted; sprinkle remaining cheese on top and let sit for 15 minutes.
