  • 1 pound large pasta shells
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella
  • 3/4 cup grated parmesan
  • 2 cups frozen spinach, thawed and drained
  • 3 cups sliced shiitake or cremini mushrooms
  • 2 teaspoons dried thyme
  • 2 chopped garlic cloves
  • 2 teaspoons dried basil
  • 2 teaspoons dried oregano
  • Kosher salt and pepper to taste
  • 1 stick (8 tablespoons) salted butter
  • 1/4 cup plain flour
  • 2 cups milk
  • 2 cups white grape juice or chicken broth

Instructions

  1. Melt butter in a skillet over medium heat. Sauté sliced mushrooms with garlic and herbs until tender.
  2. In a pot, whisk flour into milk until smooth, then add white grape juice or chicken broth until thickened. Stir in mozzarella and parmesan until melted.
  3. Cook pasta shells according to package instructions. Gently fill each shell with the mushroom-spinach mixture and ricotta cheese.
  4. Place filled shells in a baking dish and pour the sauce over them generously.
  5. Bake at 350°F (175°C) for about 30 minutes until golden and bubbly.
