Scale
  • 3 cups plain flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 3/4 teaspoon ground nutmeg
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 6 tablespoons room temperature butter
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup eggnog
  • 3 cups powdered sugar
  • 3 tablespoons eggnog
  • Ground cinnamon for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare muffin tins with liners.
  2. In a large bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, cream together butter, white sugar, and brown sugar until light and fluffy.
  4. Beat in eggs one at a time, then add vegetable oil and vanilla extract. Mix in eggnog until combined.
  5. Gently fold dry ingredients into wet mixture until just combined; small lumps are fine.
  6. Spoon batter into muffin tins, filling each about two-thirds full.
  7. Bake for approximately 15 minutes or until a toothpick inserted comes out clean.
  8. While cooling on a wire rack, prepare the glaze by whisking powdered sugar with eggnog until smooth.
