  • 1 pound high-quality beef sausages
  • 2 large onions, sliced
  • 2 cloves garlic, minced
  • 2 pounds Yukon Gold potatoes, peeled and quartered
  • 4 cups chicken broth
  • Freshly ground black pepper, to taste
  • Chopped parsley for garnish

Instructions

  1. Preheat your oven to 300ºF (150ºC).
  2. In a large Dutch oven over medium-high heat, brown the beef sausages on all sides; remove and set aside.
  3. Sauté the onions until they start to brown (3-4 minutes), then add the minced garlic until fragrant.
  4. Layer half of the potatoes in the pot; season with pepper and sprinkle with parsley. Add half of the onions and sausages, then repeat layers.
  5. Pour in enough chicken broth to cover all ingredients.
  6. Bring to a boil over medium-high heat, then cover and transfer to the oven.
  7. Bake for 2-4 hours, checking liquid levels occasionally.
  8. Taste and adjust seasoning before serving; garnish with fresh parsley.
