  • 1 large shallot, diced
  • 4 cups fresh baby spinach
  • 6 garlic cloves, minced
  • 1 small apple, finely diced
  • 1/2 cup dried cranberries, chopped
  • 2 tablespoons maple syrup
  • 1 tablespoon Dijon mustard
  • Fresh thyme and rosemary
  • 10 whole garlic cloves
  • 1 cup chicken broth
  • 2 tablespoons avocado or olive oil
  • 4 medium sweet potatoes
  • 2 tablespoons maple syrup
  • 1 to 1 1/2 teaspoons salt
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 2 teaspoons herbs de provence

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, sauté shallots and garlic until soft; add spinach until wilted.
  3. Mix in apple, cranberries, maple syrup, mustard, salt, pepper, smoked paprika, thyme, and rosemary.
  4. Slice the beef loin open like a book and stuff with the mixture; tie it securely.
  5. Place in a roasting pan with garlic cloves and herbs; pour chicken broth around it.
  6. Roast for about 2 hours or until desired doneness is reached.
