  • 2 boneless, skinless chicken breasts
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 cups chopped romaine lettuce
  • 4 tablespoons Caesar dressing
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 4 slices sourdough bread
  • 1 tablespoon butter
  • Optional: sliced cherry tomatoes for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a shallow dish, combine panko breadcrumbs and grated Parmesan cheese.
  3. Season chicken breasts with salt and black pepper.
  4. Coat each chicken breast in the breadcrumb mixture.
  5. Heat olive oil in a skillet over medium-high heat and sear chicken for about three minutes on each side until golden brown.
  6. Transfer chicken to a baking sheet and bake for 15 to 20 minutes until fully cooked (internal temperature of 165°F / 74°C).
  7. Butter one side of each sourdough slice and grill until crispy and golden.
  8. Let the chicken rest before slicing it into strips.
  9. Toss chopped romaine lettuce with Caesar dressing.
  10. Layer dressed lettuce, sliced chicken, and optional cherry tomatoes between two slices of grilled sourdough bread.
