Ingredients

Scale
  • 1/2 cup softened butter
  • 1/3 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (room temperature)
  • 2 & 1/3 cups flour
  • 5 tbsp butter (for filling)
  • 2/3 cup brown sugar
  • 1 & 1/4 cup chopped pecans
  • 1/3 cup heavy cream
  • 1/4 tsp cinnamon
  • 1 pinch nutmeg
  • 1 pinch salt

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, oil, granulated sugar, and powdered sugar until light and fluffy.
  3. Mix in the egg and vanilla extract until well combined.
  4. Gradually add flour, salt, and baking powder, mixing until just combined.
  5. Portion out dough into balls on the baking sheet and flatten them slightly. Use a measuring cup to create an indent in the center.
  6. In another bowl, combine filling ingredients—melted butter, brown sugar, chopped pecans, heavy cream, cinnamon, nutmeg, and salt—and mix until smooth.
  7. Spoon the filling into each cookie indent.
  8. Bake for about 8-9 minutes or until lightly golden. Let cool before serving.
