  • 1.5 pounds boneless, skinless chicken breasts (or thighs)
  • 1 (1 oz) packet taco seasoning
  • 1 (10 oz) can Rotel (strained to remove excess juice)
  • Juice of 1 lime
  • Flour or corn tortillas
  • Pico de gallo
  • Guacamole
  • Sour cream
  • Lime wedges
  • Cilantro
  • Cheese

Instructions

  1. Spray your 6 or 7-quart crockpot with non-stick spray for easy cleanup.
  2. Place chicken in the bottom of the crockpot and sprinkle with taco seasoning.
  3. Top with Rotel and squeeze lime juice over everything.
  4. Cover and cook on high heat for 3-4 hours or low heat for 7-8 hours until fully cooked.
  5. Drain some liquid but leave about half a cup. Shred chicken with two forks.
  6. Warm tortillas and assemble tacos with shredded chicken and desired toppings.
