  • 2 tablespoons olive oil
  • 2 pounds boneless stewing beef cubes
  • 1/2 medium onion, chopped
  • 6 cloves garlic, minced
  • 1 pound Yukon Gold potatoes, peeled and diced
  • 4 large carrots, peeled and cut into pieces
  • 3 sticks celery, chopped
  • 3 cups beef broth
  • 1 (6 ounce) can tomato paste
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • 3 bay leaves
  • 2 tablespoons cornstarch (optional)

Instructions

  1. In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Sear half of the beef cubes until browned on all sides; transfer to a plate and repeat with remaining beef.
  2. Sauté the chopped onion in the same skillet for about 3-4 minutes until soft. Add minced garlic and cook for an additional 30 seconds before transferring to your Crockpot.
  3. Add diced potatoes, carrots, celery, beef broth, tomato paste, Worcestershire sauce, salt, pepper, and bay leaves to the Crockpot. Stir well.
  4. Cook on low for about 10 hours or until beef is tender.
  5. For a thicker stew, combine cornstarch with cold water and stir into the stew during the last few minutes of cooking.
