  • 2 cups mushrooms (sliced)
  • 2 cups beef broth
  • 1 cup apple cider vinegar (optional)
  • 2 tbsp tomato paste
  • 3 tbsp unsalted butter
  • Fresh thyme
  • 1 bay leaf
  • 1 tbsp minced garlic
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. Season short ribs generously with salt and pepper. Sear in a skillet over medium heat until browned on all sides.
  2. Transfer the short ribs to the crockpot. Add baby carrots, mushrooms, beef broth, apple vinegar (if using), tomato paste, butter, bay leaf, thyme, minced garlic, salt, and pepper.
  3. Cover and slow cook on low for 8 hours until meat is fork-tender.
