  • 4 large lamb shanks
  • 2 tbsp extra virgin olive oil
  • 1 ½ tsp salt
  • 1 tsp black pepper
  • 1 tsp sweet paprika
  • 1 tsp ground cumin
  • 1 tsp allspice
  • 4 large shallots (peeled and sliced)
  • 2 celery stalks (finely diced)
  • 5 carrots (peeled and cut into chunky pieces)
  • 5 cloves garlic (sliced or minced)
  • 14 oz (400g) can peeled plum tomatoes (roughly chopped)
  • 1 tbsp tomato paste (optional)
  • ½ cup (250ml) apple vinegar
  • 1 cup (250ml) beef broth or chicken broth
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 2 bay leaves
  • 1 cinnamon stick
  • 3 tbsp parsley (chopped)
  • Red pepper flakes

Instructions

  1. Remove lamb shanks from the refrigerator for 30 minutes before cooking.
  2. Season shanks with olive oil, salt, pepper, paprika, cumin, and allspice.
  3. Brown shanks in a skillet over medium heat; set aside.
  4. Sauté shallots, celery, carrots, and garlic until tender in the same skillet.
  5. Combine all ingredients in the crock pot: add tomatoes, vinegar, broth, herbs, and spices.
  6. Place browned lamb shanks back into the pot and cover with sauce.
  7. Cook on LOW for 8-10 hours or HIGH for 6-8 hours until tender.
