  • 23 boneless, skinless chicken breasts (or thighs)
  • 4 cups low-sodium chicken broth
  • 1 small yellow onion, finely chopped
  • 34 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1 (14.5 oz) can crushed tomatoes
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Place raw chicken in the bottom of the crock pot.
  2. Add chopped onion, minced garlic, Italian seasoning, and optional red pepper flakes.
  3. Pour crushed tomatoes and chicken broth over the mixture.
  4. Cover and cook on low for 6–7 hours or high for 3–4 hours.
  5. Shred the cooked chicken with forks and return it to the pot.
  6. Stir in heavy cream until combined.
  7. If desired, thicken with a cornstarch slurry.
  8. Gradually add Parmesan cheese while stirring until melted.
  9. Cook uncovered on low for another 20–30 minutes.
  10. Season with salt and pepper; garnish with fresh parsley before serving.
